The Forefront Culinary & Nutrition Team is proud to be a partner with Valley View Rehab and Nursing Center!

Forefront is culinary and support services company specializing in senior living communities and healthcare.

Our purpose is to prepare wholesome, nourishing food and maintain clean, safe and comfortable environments that enhance the lives of our seniors, families and community staff.

 

Randall Hand

Executive Chef

Randall Hand is Valley View Rehab & Nursing Centers Executive Chef.  With his culinary degree from Le Cordon Blue College of Culinary Arts in Atlanta, Georgia and over 14 years of cooking experience Randall is creating menus that are enjoyable and beneficial to our residents using seasonal ingredients.

He also ensures the highest of standards in supporting wellness programs for both residents and staff.

 

 

We are also happy to announce that Nicole Tagge, RD, LDN, has accepted the position of Clinical Nutrition Director and will remain a critical part of the Valley View Family.

November Visiting China

China has a food reputation built upon centuries of flavors, character unchanged by war and revolution. Gastronomic fans may coin China as the Kingdom of Cuisine.

Five spice powder, a blend of cinnamon, cloves, fennel, star anise, and Sichuan peppercorns, finds its roots in traditional Chinese medicine. Previously it was believed that the mixture would cultivate internal harmony by uniting the five main flavors: sweet, sour, pungent, bitter, and salty. The balanced flavors aligned with the five main elements (earth, fire, water, metal, and wood), helping one achieve balance in mind and body.

The enjoyment of fresh seasonal fruit and staying hydrated! The Wellspring program offers a base of recipes with a seasonal twist year-round. Along with the increasing water intake, each recipe host a variety of healthy fruits, vegetables and herbs that supports the immune system and overall wellness.
